The Hotel-Restaurant Les Minotiers is situated in walking distance to the mediaeval square of Mirepoix and close to the most prestigious sites of the region of Ariége.

Well located, nice big room, modern bathroom, has a bar which is pleasant. Hotel is very quiet and has lots of parking. Breakfast has lots of variety and is very tasty. I would stay here again.

Hotel for a stopover, not for a stay!
Stay from August 11 to 17 – Balneo room
Balneo room booked several months in advance. Upon our arrival in 98.6 °F weather, the welcome was unfortunately much cooler than the outside temperature!
Key placed on the counter and a few directions: cross the parking lot and the street, the annex is across the way, the code is on the card and you will find the room.
Figure it out yourselves!
Surprising, because we later noticed that other guests in this same annex were, in fact, accompanied to their room.
With the suitcases, first challenge: an entrance door so heavy that you really have to be a strong miller to enter the Minotiers! Then the room was in complete darkness until we discovered on our own that we had to insert the card into a small box to get electricity.
The room is beautiful and the balneo is pleasant, but there are no instructions for use. So we tested the buttons until we found how it worked! In the evening, the owner asked us if we had managed to use it. We explained the lack of instructions and our experimental method to her... this did not seem to particularly surprise her.
The terrace is much less appealing: about 12 m² of concrete, a table and two old iron chairs, no lounge chairs, and a very busy road about twenty meters away. In the evening, insects, attracted in particular by the small pond, also make it difficult to enjoy it quietly.
With 37 °C outside, another surprise: centrally managed air conditioning, which we only really had control over after 7:30 p.m. Hooray for vacation!
We also didn't find a pleasant place to simply sit down for an aperitif.
Another important point: we had chosen this establishment in particular for its restaurant, which is also open to outside guests. Reservation made online and then confirmed by phone, but no one informed us that the restaurant was not operating on Friday and Sunday evenings.
This information should be indicated much more clearly on the site and mentioned during booking or, at the very least, upon arrival. If we had known this before booking, it would probably have influenced our choice of hotel.
Fortunately, the restaurant largely makes up for it!
Only one hiccup at the first meal: barely had the appetizers been served when the starters arrived! We sent them back while we finished our appetizer in peace. Fortunately, that was the only problem on the restaurant side.
As for the rest: well-crafted, tasty, and generous dishes.
Special mention to the two "JO-JO"s, Jordy and Jordane, always smiling, available, and attentive. They will recognize themselves!
My 3 stars go essentially to the restaurant, its cuisine, and the two JO-JO's. Without them, the rating would have been significantly less generous.
