Very bad
Additionally, they forced us to pay for the meal of someone who could not attend despite notifying them 3 days in advance.
What a shame.

Beautiful hotel but mediocreoperating standard and awful food
There is no question that this a spectacular Parador property. The former monastery has been beautifully preserved and converted into an upscale hotel. The architecture is stunning, the cloisters are magnificent, and the entire setting in the Ribeira Sacra feels peaceful and almost timeless. If you are looking for atmosphere, history, and a sense of place, few hotels can compete.
Unfortunately, the hotel operations fall well short of what the building itself deserves.
For starters, there was no bellman or porter available to assist with luggage. Given the layout of the property, the distances involved, and the fact that many guests are arriving with suitcases after long journeys, this feels like a significant omission.
There was also no welcome letter, no information about hotel amenities, no guide to hotel services, and very little information about the surrounding area. Guests are largely left to figure things out for themselves.
The room was comfortable and decorated in a classic style that suited the historic building. However, some aspects are beginning to show their age. Accessible electrical and USB outlets were insufficient for modern travelers carrying multiple devices. The traditional heavy metal room key may look charming, but it is impractical to carry around. Many other Parador properties have already switched to electronic key cards, and this hotel should do the same.
While most of the room was clean, the bathroom had issues. There was extensive mold and mildew in the bathroom, which is unacceptable.
The amenities were also disappointing. No robe or slippers were provided. At the rates charged and with a 4-star classification, most guests would reasonably expect both.
Breakfast was one of the highlights of the stay. The buffet was better than average. The option to have eggs cooked to order was appreciated.
Dinner, however, was an entirely different story.
Our tour group was assigned a fixed menu and was not permitted to make substitutions or modifications. The attitude of the restaurant staff suggested that guests should simply accept whatever was placed in front of them. The service felt dismissive and indifferent.
The food itself was genuinely inedible. Much of it appeared to be repurposed from the breakfast buffet. The bread was stale and clearly a day or two old. The white wine was corked. The red wine was at least drinkable. The overall food was so bad that even our Spanish guide complained about its quality.
In the end, the Parador de Santo Estevo is a destination worth visiting because the building and setting are extraordinary. But the hotel succeeds because of its historic monastery, not because of its hospitality. The operational standard, including service, amenities and dining, need improvement.

A place we always want to return to
Located in the impressive Monastery of Santo Estevo de Ribas de Sil, the parador uniquely combines history, tranquility, and beauty. Strolling through its cloisters and historical corners is a fascinating experience, as each space conveys the immense heritage and cultural value of the ancient monastery.
The natural surroundings are spectacular. The trails surrounding the parador allow for a complete disconnection from daily life and enjoyment of incredible landscapes, turning each walk into a moment of calm and connection with nature.
The spa is another of its great attractions. It is the perfect place to relax and enjoy a few hours of well-being in a tranquil environment that is meticulously cared for. We always leave feeling rejuvenated after each visit.
Moreover, the cuisine is excellent. The quality of the products, the preparation of the dishes, and the service make each meal an experience to enjoy without haste. It is a magnificent opportunity to discover and savor the rich Galician culinary tradition.
In short, a unique parador that brings together history, nature, rest, and exceptional cuisine. That is why we have returned several times and will continue to return whenever we have the chance. ⭐⭐⭐⭐⭐
