A safe bet
Easy to reach, easy to park, very friendly staff.
A decent breakfast is served (fresh bean coffee and fresh bread croissants). The (interior of the) hotel is a bit dated, but the room is spacious and convenient.
Beds are of good quality.
Restaurants are nearby.

Structure to avoid.
I remembered this simple but nice hotel.
This is my third visit over the years. Well, the hotel is now very run down and dirty, unfortunately! The room cleaning is very superficial. The tablecloth on the small table has not been changed and shows traces of the previous guest. The floor has not been cleaned and the room smells musty. The bathroom is missing a glass and a soap holder. The plumbing needs to be replaced. The sink has noticeable cracks. The small outdoor terrace is dirty and there are cigarette butts on the ground. The garden is not well-kept and there are many weeds. In the closet, there are 5 hangers for clothes but they are all different. Where the television is positioned does not allow for viewing the channels because it is located in the closet and furthermore, the remote control is broken...
The nightstands have various stains of different natures.
No, it is not a room, as you told me, rustic. It is an old, dirty, and non-functional room.
Next time, I will not come back here.

Lovely staff but in need of an update
We used St Christophe as a base for 7 days, whilst conducting a ski safari, visiting several Swiss resorts. Our positive experience was the staff who were all extremely helpful and welcoming. The restaurant was excellent and I imagine it is why most visitors come here. They stock a superb wine list and the whole dining experience is most atmospheric, if a little pricey. However, the bedrooms are in need of an update and somewhat below par. The lumpy pillows need to be replaced and our bedside lamp looked like someone had set fire to it. The real killer blow was a lack of hot water for 4 of our 7 nights – not what you need after a hard days skiing. Were it not for the friendliness of the staff, we would have moved elsewhere. I fear other travellers may not be so forgiving.

Basic rooms - with traffic noise
We used this for an overnight stay after a night out in Bex. The sisal matting underfoot felt like several hundred weary travellers had used it before, likewise the pillows. Pokey bathroom, but basically clean. Luckily I had earplugs since the noise from fast passing traffic does penetrate the rooms. Breakfast was meagre. For CHF180 a room, we felt this was poor value.

Great restaurant - overpriced rooms
The St Christophe is an old custom's house dating back to the 16th century. The fantastic chimney and fireplace, wooden beams, high ceilings and appropriate lighting make it a romantic place suitable for couples or groups of friends.
Being rated with Gault & Milllaut, the restaurant isn't exactly cheap and does not offer a children's menu.
Food is excellent (I would recommend meat over fish), plentiful, cooked exactly to your liking. Service is perfect, staff is knowledgeable, and whether you go for an "à la carte" or set menu, I believe you will fully enjoy the culinary experience in a warm and original setting.
Stick to Swiss local wines, you will get better value for money, and if you ask, you will get good advice.
So All in all, a very good dining experience.
As the restaurant has a Motel extension, it is practical, especially if you enjoy drinking with your meal. However, the rooms are quite basic, although good size and clean. Bathrooms are very small and amenities at the minimum. Finally, as the hotel is located between the main road and the highway, it can be noisy if you sleep with windows open. Breakfast is also on the basic side which makes me say that $ 190.- for a double room and breakfast is really overpriced. Other than that, with a parking space right in front of your room, being within 30 minutes of ski slopes, thermal baths, and other attractions in the region, it's a good place for an overnight stop with a high level restaurant.
If you dont intend to eat there, I wouldn't sleep there...
